AUBERGINE SLICES WITH CHEESE, HERBS, PATE`
While aubergines are not the most exciting of vegetables, this is a quick and tasty recipe. No “salting” of the aubergine slices required.
You will need non-stick fry pan or griddle; medium slices of Aubergines; fresh herbs e.g., Marjoram, mint, watercress, or dried herbs if fresh not available; half-fat cheese; Worcester sauce.
Method Spray the fry pan with vegetable oil and fry the aubergine slices over a medium heat for about 10 mins,until soft. Re-spray the fry pan and turn over slices. Place herbs on top of slices and top them with small pieces of cheese with a few drops of Worcester sauce, and mustard on each slice. Heat until cheese melts. Enjoy.
